These rainbow popsicles are super delicious and easy enough to make that the whole family can pitch in. Add in an extra dash of fun by experimenting with pineapple, papaya, and other fruits.
You can also make these popsicles on your own as a surprise for the kiddos after a long day of summer fun, an afternoon snack when they get home from school, or a treat for after their orthodontic appointment. Popsicles are braces-friendly, and their coldness might even help to relieve some orthodontic discomfort. What’s not to love about these popsicles?
Ingredients
- 1 cup of frozen raspberries
- 2 kiwis
- 1 cup of frozen blueberries
- 1 mango
- Water
- Popsicle sticks or holders
Directions
- Add the raspberries and 2 tablespoons of water to a blender and puree until smooth.
- Pour mixture 1/4 way into the popsicle molds.
- Place popsicle sticks/holder in each hole after pouring.
- Freeze for at least 10 – 15 minutes.
- Rinse the blender.
- Add diced mango pieces with 1/4 cup of water to the blender and puree until smooth.
- Pour the mango mixture into the molds, replacing the popsicle stick/holder each time (or they won’t go in at the end).
- Rinse the blender and repeat the steps for each other fruit. (Note: Kiwis won’t need added water, and blueberries will only need about 1 tablespoon of water to puree.)
- Freeze completed popsicles for 2 – 3 hours.
- Remove popsicles from the mold and enjoy! (If popsicles don’t slide out easily, run the mold under warm water briefly to loosen up the popsicles.)
